Cook chicken & sauté veggies. Combine shredded chicken, sautéd vegetables and some of the enchilada sauce.
Blend cashews, water, nutritional yeast, garlic powder, onion powder, pepper and salt.
Cover bottom of pan with enchilada sauce. Roll up tortillas filled with cheese sauce & chicken filling.
Smother in enchilada sauce then drizzle on dairy free cheese sauce. Bake at 400° F for 20 mintes.
