The secret to the best healthy chicken soup is an herbaceous both and white beans that act like little nourishing gnocchis.
Sauté vegetables, herbs and seasoning. Simmer in white wine.
Add chicken, chicken stock, water, tomato paste and black pepper. Bring to a boil then simmer 25 minutes.
Add sweet potatoes, bring to a boil then simmer for 15 more minutes.
Remove chicken and shred. Add back in with beans. Stir.
Add squeeze of a lemon wedge to each bowl before serving. Enjoy!
