Lebanese Stuffed Squash (Kousa Mahshi)

Ingredients

Core the squash

Using a coring tool, hollow out the squash leaving the bottom intact. 

Create tomato broth

Combine the water, crushed tomatoes and salt in a large pot.

Make the stuffing

Combine the mint, parsley, ground lamb or beef, uncooked rice, crushed tomatoes, allspice, salt and black pepper.

Stuff the squash

Fill the squash with the spiced beef and rice mixture. Wrap any leftover stuffing in aluminum foil.

Submerge in pot

Place the squash and aluminum covered stuffing into the pot with the tomato broth.

Cook

06

Bring to a boil. Cover. Simmer on low for 60 minutes. Enjoy!
