Allow a food processor to handle the chopping, making meal prep even easier.
Chop the onion finely and either pulse the mushrooms, celery, and carrots in a food processor or chop them the same size as the onion.
Sauté the veggies, meat, salt and tomato paste. Cook off wine until mostly absorbed.
Simmer for at least 30 minutes, but ideally 3 hours for optimal taste & texture.
